The coastal location of this distillery adds a freshness to its waxy and nutty distillate. Matured in a hogshead and finished for over 7 years in a first fill ex-Madeira wine cask for layers of caramel and walnut.
A costal Speysider is an unusual description but one that’s very appropriate here. We believe its location contributes to the nutty, spicy, waxy and salty quality found in the distillate. With some richness and backbone to play with, we allowed the spirit a full 7 years in a fresh Madeira cask to really develop the intenseness of the spicy jammy fruitcake character we identified early on in its maturation.
The tasting revealed spiced stewed fruit, maple syrup and candied pecan.
